The gastronomic cafe “Brown Fox and Lazy Dog” is a family project of restaurateur Natalya Tuktarova and her daughter Elena Marcus. “After a couple of years of working on The Fox and the Hound, we found our ideal roles. Mom, with her 15 years of experience in the restaurant business, is the brand chef and controls the kitchen, and I took over the general management of the establishment, running the bar and holding events,”— Elena Marcus talks about the gastro cafe.

Natalya Tuktarova was lucky enough to work with chefs from different countries world: Marciano Palli from Italy, Lee Ho Geun and Kim Jong Bok from South Korea, Tan Chun Yi from Thailand gave me a lot, Juan Amador from Catalonia is the owner of the 3-star Michelin restaurant Amador in Germany.

In April 2013, the Brown Fox and Lazy Dog gastro cafe opened a season of Sunday family brunches. Family in the literal sense - the owners of the cafe, Natalya Tuktarova and her daughter Elena Marcus, personally greet guests in the hall during the day, and in the open kitchen prepare homemade pies according to family recipes.

In addition, on Sundays from 13.00 to 17.00, the cafe hosts creative master classes for children and adults, in which the whole family can participate or enjoy brunch at the next table while the children are busy with useful and interesting activities. The cafe also has children's menu(homemade chicken noodle soup - 150 rubles, mini cheese pizzas - 150 rubles, spaghetti Bolognese - 160 rubles, tagliatelle with mozzarella 110 rubles, steamed chicken cutlets with parsley sauce - 190 rubles, Jungle cocktail (banana , raspberry syrup, pineapple juice) - 180 rubles) and highchairs for the youngest visitors.

The cuisine of the Brown Fox is mainly European: French and Italian cuisine, but there are also several Asian dishes, as well as a children's menu. Separate sections of the menu are dedicated to sandwiches on our own bread, open-faced Alsatian tarts flambe, homemade pasta fresco and wok dishes. Lunch sets are served on weekdays from 12:00 to 16:00 and change daily - what will be served today can be found on the “Brown Fox” page in facebook. In addition, almost any dish can be ordered through delivery or takeout.

All dishes at The Fox and the Dog are prepared entirely from scratch, including business lunches. Here, home-made bread is baked, all sauces and marinades are prepared independently - only soy and Worcestershire are used from ready-made ones. Even homemade eclairs are filled with cream immediately before serving, and sugar and syrups are not used in cocktails and lemonades.

The special pride of “Brown Fox and lazy dog» - our own desserts, which are prepared right here in the open kitchen: carrot cake with country sour cream, chocolate cake with apricots, homemade eclairs with the most delicate cream, thin lemon pie with ice cream and chocolate candies self made.

The Brown Fox closes later on Fridays and Saturdays and has a DJ playing in the evening.

The name of the cafe “Brown Fox and Lazy Dog” is a phrase that attracts the attention of all philologists and designers. In the English version, "The quick brown fox jumps over the lazy dog" contains all the letters English alphabet and is used in design to test fonts.

Initially, “Brown Fox” opened on Tverskaya-Yamskaya Street, and it soon became clear that the space could not accommodate everyone. To realize the long-standing dream of the owners of the establishment - to create a full-fledged bar, behind the counter of which intimate conversations are held, it was decided to move to the Tsvetnoy Boulevard area, to Sadovo-Samotechnaya Street. In the updated “Fox and Dog”, two spacious, bright halls appeared, the kitchen space was expanded and there was space for a cozy summer veranda.

In place of the French pancake house “Creperie de Paris” on Tverskaya-Yamskaya, a new cafe has opened with European cuisine, a full-fledged bar and a memorable name - “The Brown Fox and the Lazy Dog”. This is the first project in Moscow by restaurateur Natalya Tuktarova, who has several serious restaurants in Almaty.

The cafe's menu mainly features European cuisine: French and Italian, but with a small splash of Asian dishes, for example, there is Thai coconut soup. Each section of the menu has at least five items: twelve sandwiches on different breads, five soups, eleven salads, ten types of pasta, twelve main courses of meat and fish, plus several rice dishes - all this by chef Inna Prisyazhnyuk. Also at “The Brown Fox and the Lazy Dog” they prepare twenty-one types of pizza for very thin dough, two of them are sweet. For convenience, all pizzas are numbered on the menu. Pizzaiolo Anton Fedotov is responsible for this part of the menu. Desserts, including sweets, and four types of bread: sun-dried tomato focaccia, ciabatta, grissini and Rye bread- they do it right here, in the kitchen.

Alcoholic cocktails in a small bar are prepared without sugar or syrups, so even a diabetic can drink them. Bar manager Alexey Trunov brought half of the bar menu from City Space Bar, where he previously worked, the rest was invented specifically for this project. In a few weeks, Brown Fox and the Lazy Dog will start selling alcoholic cocktails takeaway in special paper cups.

The name of the cafe, although it seems to be a hint of fairy-tale characters, actually refers to a phrase containing all the letters of the English alphabet and has been used by designers for many years to test fonts - The quick brown fox jumps over a lazy dog. The name, entire identity and interior of the place were created by the Proekt bureau.

Now the cafe is open from 11:00 to midnight, but in a couple of weeks, in parallel with the launch of breakfast, it will begin to open earlier and close later on weekends. Around the same time, they are going to add dynamic light and video installations to the interior, made together with young artists. IN next year The creators of “The Brown Fox and the Lazy Dog” plan to make a large summer terrace in the courtyard, perhaps with a place for dancing.

NATALIA TUKTAROVA

The owner of the cafe "Brown Fox and the Lazy Dog"

“I’ve been working in restaurants for fifteen years, but not in Moscow, but in Alma-Ata. During this time I had six serious restaurants there that served local important people. Therefore, you understand what quality standards these were. In Moscow, I decided to open another project, not in the format of an expensive restaurant. I already had experience working with very good chefs from Japan, South Korea, Italy, Germany and France, and I wanted to transfer this quality of cuisine to a more democratic basis, to make, rather, a city gastronomic cafe. So some dishes from the menu of “The Brown Fox and the Lazy Dog” were prepared not by the current cafe team, but by my good friends, chefs from different countries. For example, our coconut soup was invented by a half-Thai, half-South Korean chef with a good European education. Therefore, all the ingredients in it are very correct; he has been perfecting this recipe for many years.”

ALEXEY TRUNOV

Bar manager of the cafe "Brown Fox and the Lazy Dog"

“We try to have choice in everything. Despite the small size of the bar, we have almost every type of alcohol, from different producers. Since we have European cuisine, we also have wine. There are no substitutes or sugar in our cocktails, which is important. We don't use all those sweet unnatural syrups. But there is loyalty to the guests, and if they don’t like any of the ingredients, we will be happy to bring the cocktail to the taste that particular person needs.

We have a lot of cocktails, we are constantly updating them. A new summer map should appear just the other day. And soon we will have a signature cocktail “The Brown Fox and the Lazy Dog.” It will be served in two special cut glasses. Both drinks are masculine and should not be mixed in the same vessel. But drinking one another turns out very tasty. One, “Lazy Dog”, includes bourbon, raspberry, “Amaretto”, passion fruit and pomegranate, the second - “Brown Fox” - lemongrass, ginger and gin.”
